Bajrey ki roti is usually found in dhabas  and rural areas. Pearl millet flour (bajrey ka aata) is kneaded into a dough and made into rotis by hand instead of using rollin pin. Here is a recipe that can be made in any modern kitchen.

Required ingredients

  • 2/3rd cup pearl millet flour (bajrey ka aata)
  • 1/3rd cup whole wheat flour (to make the dough pliable)
  • ½ cup very warm water  or more if needed
  • Some whole wheat flour to roll rotis

Directions & How to

  • Mix both the flour in a wide bowl.
  • Add water slowly, mix with the help of fingers until the dough comes together.
  • Make 4-5 equal sized balls. Press 1 ball in flour lightly and roll out a thick roti. Do not apply too much pressure while rolling.
  • Apply water with a pastry brush on both sides of roti and place it on a heated non-stick tawa. Flip the side after 10-15 seconds, keep it on other side for 30 seconds.
  • Hold it with tongs over direct flame for 30-45 seconds on both sides to cook completely.
