Baigan ka Bharta is a simple everyday dish. Here is simple recipe for this tasty dish.

Required ingredients

  • 250 gms brinjal (round variety)
  • 3-4 garlic cloves
  • 2-3 green chilies
  • 2 medium sized tomatoes
  • 1 tbsp. chopped coriander leaves
  • 1 tbsp. chopped soya leaves (dill) – optional
  • ½ cumin seeds
  • Salt to taste
  • Oil

Directions & How to

  • Char brinjal and tomatoes on open flame.
  • Char garlic cloves in a pan or girdle.
  • Remove skin from brinjal, tomatoes and garlic and put together in bowl.
  • Mash the vegetables with a potato masher or alternatively grind in a food processor.
  • Add salt, chilies, coriander and soya to the brinjal mix.
  • Heat oil in a kadai and splutter cumin seeds, add the brinjal mix and cook till it leaves oil
