Chicken Balls In Hot Sauce

Chicken balls in hot sauce, fried chicken dumplings simmered in a hot and spicy sauce. Serve it as a main course dish. It’s a good accompaniment to Chinese rice dishes.
Required ingredients
For the chicken balls
- 500 grams boneless chicken - cut into pieces
- 1 tsp ginger garlic paste
- 1 tbsp soya sauce
- 1 tsp red chilli flakes
- 1 egg
- 1 tbsp corn flour
- Salt as per taste
For the sauce
- 1.1/2 tbsp finely chopped garlic
- 1/2 tbsp chopped ginger
- 1 tsp red chilli flakes
- 1/2 cup finely chopped onion
- 1 tsp red chilli paste
- 1 tsp vinegar
- 1 tsp soya sauce
- 1 tbsp tomato sauce
- 2 tbsp tomato puree
- 1 tsp red chilli sauce
- 1/8 ajinomoto/ mono sodium glutamate
- 2 tbsp corn flour mixed in a little water
- 1 cup water
- Salt as per taste
- 1/2 cup chopped fresh greens of spring onions for garnishing
- 3 tbsp oil + extra oil for deep frying the chicken balls
Directions & How to
To prepare chicken balls
- Mix all the ingredients in the food processor and grind it to a paste.
- Keep it aside for 10 minutes.
- Make small balls of it and deep fry till done.
- Remove on absorbent paper and keep aside.
To prepare the sauce
- In a small bowl mix vinegar, soya sauce, tomato sauce, tomato puree and red chilli sauce and keep aside.
- Heat oil in a wok. Add ginger, garlic and chilli flakes and fry it till golden.
- Add onions and saute it for a minute.
- Mix in red chilli paste and cook it for another minute.
- Mix in the sauce mixture, saute and stir it well.
- Put salt and ajinomoto.
- Add a cup of water and corn flour paste and cook it till it thickens.
- Now add the fried chicken balls and let it simmer for a minute.
- Garnish with chopped spring onions greens and serve hot.
