A delicious corn spinach filling…this can be used in making quesedillas, cold sandwiches, bread rolls etc.
Required ingredients
- 1.5 cups chopped spinach
- 1/2 cup sweet corn
- 1 medium onion - finely chopped
- 3-4 flakes garlic - finely chopped
- 1 tsp pepper powder
- 1/2 tsp cumin powder
- 1 tsp oregano
- Salt to taste
- 2 tbsp olive oil
Directions & How to
- Heat oil in a wok, add garlic and fry till it changes color, add onion and saute it for 2 minutes.
- Add corn and spinach, stir well and saute it for 3-4 minutes.
- Season it with salt, pepper, cumin powder and oregano.
- Let it cool before using.
