Fried Eggplant is a simple and tasty dish. Eggplants marinated in red chilli sauce and herbs and fried. Can be served as a starter or as a side dish.

Required ingredients

  • 4-5 medium sized brinjal or egg plant – cut into thin slices
  • 2 tbsp beaten yoghurt
  • 1 tsp red chilli sauce
  • 1 tsp red chilli paste
  • ½ tsp garlic powder
  • ½ tsp cumin powder
  • ½ tsp mixed dried herbs - oregano, parsley, basil
  • Salt to taste
  • 4-5 tbsp oil

Directions & How to

  • Mix chilli powder, chilli sauce, garlic powder, cumin powder, dried herbs and salt in the yoghurt. Marinate egg plant slices in it for around 10 minutes.
  • Heat oil in a frying pan, and fry the egg plant slices till done.
  • Serve hot.
