Mutton ghee roast, a hot and spicy dish, good to serve as a main course, goes well with  naans or paranthas or any Indian flat breads.

Required ingredients

  • 500 grams mutton with bones- cut into medium sized pieces
  • 3 medium sized onion - sliced
  • 2 large tomatoes - chopped
  • 7-8 green chillies - cut lengthwise
  • 1 tbsp ginger garlic paste
  • 1/2 cup beaten yoghurt
  • 1 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp brown vinegar
  • Whole spices - 1 black cardamom, 1 star anise, 1 stick of cinnamon, 1 bay leaf, 4 cloves.
  • 1 tsp sesame seeds
  • Salt as per taste
  • 1 tsp oil
  • 1/2 cup clarified butter or ghee
  • Finely chopped coriander leaves for garnishing

Directions & How to

  • Mix yoghurt, chilli powder, turmeric powder and salt. Marinate mutton in this for an hour. Heat oil in a pressure cooker, add mutton and fry it till its juices oozes out. Add a cup of water and pressure cook it  till 3-4 whistles.
  • Heat clarified butter or ghee in a pan. Add whole spices and fry for 10 seconds. Add onions and fry till it turns golden.
  • Add chopped tomatoes, ginger garlic paste, coriander powder,salt and vinegar. Cook for 2-3 minutes.
  • Add the cooked mutton along with any liquid or stock ( if remaining) and fry it nicely for 7-8 minutes on slow heat till the liquid almost dries up and the mutton is roasted nicely.
  • Now add green chillies and sesame seeds and cook it further for 2-3 minutes.
  • serve hot, garnished with coriander leaves.
