This recipe is a slight variation of roghan josh, which is a very popular authentic kashmiri dish.

Required ingredients

  • 500 g mutton
  • 3/4th  cup thick curd
  • 2 medium sized onions finely chopped
  • 2 tbsp ginger garlic paste
  • 1 tsp kashmiri red chilli powder
  • 1 tsp dry ginger powder
  • 1 tsp garam masala powder
  • 1 tsp black peppercorns
  • 4-5 cloves
  • 4-5 green cardamoms
  • 1" stick cinnamon
  • Few mace strands
  • Salt to taste
  • 4 tbsp clarified butter( ghee)

Directions & How to

  • Heat ghee in a pressure cooker, add peppercorns, cloves, cardamom , cinnamon and mace.
  • Add mutton and some salt and fry it till well browned.
  • Take out the mutton pieces and add onions to the ghee, fry them till golden brown.
  • Add ginger garlic paste, red chilli powder, ginger powder and garam masala powder and salt. cook till ghee  separates.
  • Now add the mutton pieces back mix well, add curd and 1/4th cup of water. Put on high heat for 2 whistles and then on low heat for about 15-20 minutes.
Serve with naan.
