Delicious and healthy spinach and chicken sandwich… a nutritious meal for kids and adults as well. Wrap it up for picnics and enjoy them.
Required ingredients
- 1/2 cup blanched spinach
- 1/2 cup boiled and shredded chicken
- 1/2 cup grated cheese - optional
- 5-6 flakes of garlic - finely chopped
- 1 medium onion - finely chopped
- 1/2 tsp pepper powder
- 1/2 cup finely shredded cabbage
- 10 white/brown bread slices
- 2-3 tbsp mayonnaise
- 1 tsp oregano
- Salt as per taste
- 2 tbsp olive oil
Directions & How to
- Heat oil in a pan, add garlic and fry till it changes color, add onion and saute it for a minute.
- Mix spinach and chicken and cook for another 2-3 minutes.
- Season it with pepper, oregano and salt.
- Transfer it to a mixing bowl and let it cool for a while.
- Add shredded cabbage, cheese( if using), and mayonnaise and mix it well.
- Spread the prepared filling evenly on 5 bread slices and cover it with remaining slices.
- Cut the sandwiches diagonally into halves or quarters.
- Serve with tomato ketchup.
