Vegetarian Minestrone soup is a very hearty soup. Here’s the vegetarian and easy version of it. Very simple recipe made with simple ingredients.

Required ingredients

  • 2 tbsp olive oil
  • 1 small onion chopped
  • ½ tsp minced garlic
  • 1 small carrot chopped
  • 5-6 green beans chopped
  • 1 tsp dried oregano and basil leaves
  • Salt and pepper to taste
  • 2 cups chopped tomatoes
  • 2 cups vegetable stock
  • 1/4th cup kidney beans (cooked)
  • 1/4th cup macaroni

Directions & How to

  • Heat oil in a deep sauce pan; cook onion till softened. Add the minced garlic and sauté for few seconds.
  • Add carrot and beans and cook till soft.
  • Now add the tomatoes and cook on high flame till completely cooked. Stir in salt, pepper and dried oregano and basil leaves.  Mix it well.
  • Add the vegetable stock, kidney beans and macaroni. Cook till the macaroni has softened.
  • Check seasonings and serve hot.
