Nutritious and healthy vermicelli upma…I have used rice vermicelli for this recipe…a good  option for healthy breakfast and tiffin box.

Required ingredients

  • 100 grams rice or wheat vermicelli
  • 1 small onion - finely chopped
  • 8-10 french beans - finely chopped
  • 1/2 carrot - finely chopped
  • 1/2 capsicum - finely chopped
  • 1/4 cup green peas
  • 5-6 garlic cloves - finely chopped
  • 3-4 green chillies - fienly chopped
  • 2 sprigs curry leaves
  • 1 tsp cumin seeds/zeera
  • 1 tsp mustard seeds/rai
  • 1 tbsp bengalgram/chane ki dal
  • 1 tsp vinegar
  • Sallt to taste
  • 3-4 tbsp oil

Directions & How to

  • Boil the vermicelli till almost done. ( Take care not to over cook it.) Drain and keep aside.
  • Heat oil in a pan. Add cumin seeds, mustard seeds and bengal gram( chane ki dal). When it crackle, add chopped garlic, curry leaves saute for few seconds.
  • Add onion and fry till it turns soft. Add all the chopped veggies and green chillies, saute for a minute.
  • Mix vinegar and salt. Cook it for 3-4 minutes or till the vegetables are cooked.
  • Now add the boiled vermicelli and gently toss it well.
  • Cook for another 2-3 minutes and serve hot.
